Description
Pillsbury and Cinnabon will always have a special place in our hearts, but this recipe will actually have a place in our kitchens. Our low sugar, high protein, gluten free pancakes with cream cheese glaze make a better-for-you breakfast that’s still totally crave-worthy. Makes 8 pancakes, serving size 2 pancakes.
Ingredients
PANCAKE BATTER
1/2 cup coconut flour
2 tbsp zero calorie powdered sugar (confectioners swerve)
Mix all ingredients for the pancake batter in a blender.
In a small mixing bowl, mix together the ingredients for the cinnamon swirl. Place the cinnamon roll swirl mix into a small baggie and snip off the corner with scissors once ready to use.
Melt a little bit of coconut oil in a non-stick pan over medium heat, enough to lightly cover the pan.
Drop 1/4 cup of the pancake batter onto the pan. Add the cinnamon swirl.
Turn the pancake over once the top starts to firm and bubble, roughly 2 minutes. Cook the side with the swirl for another 30 seconds to 1 minute. Repeat until the batter is gone.
To make the cream cheese frosting, mix the cream cheese, zero calorie sweetener, liquid of choice, and vanilla extract. Set aside.
Plate the pancakes and drizzle the cream cheese glaze on top. Enjoy!
